Come ring in the New Year with your Proof Family!

Chef Wilson and company will be offering two seating and 2 different dining experiences this New Year’s Eve, offering this menu December 29th, 30th, and 31st!

1st seating will be from 5-7pm featuring a 3 course prix-fixe and limited a la carte menu $60.00 per guest

1st Course

Orange and Date Salad winter greens and herbs, tossed with an orange-fennel vinaigrette

Celery Root bisque, cranberry preserves and pine nut brittle

2nd Course

Tarragon poached gulf Shrimp and Mahogany Clams in a green chile-basil brodetto

Iberico Presa with smoked shallot marmalade, pickled mustard seed, chimmichurri, Peruvian potatoes, parsley-mustard jus and sesame glass

Crespelle- stuffed and poached pasta with portabello, cremini mushrooms, and spinach finished with porcini mushroom jus and 30 month Parmigiano-Reggiano.  

Dessert

“Banana Cream Pie” with pineapple and Marconas

Chocolate Cremoso with passion fruit, coffee crumble, and burleed meringue

2nd seating will be 8-10pm featuring a 5 course tasting menu, $79.00 per guest, with limited a la carte menu $134 with wine pairing

Kabocha Squash Agnolotti, pomegranate, black trumpet mushrooms, walnut crumble and sage froth
